After a quick review of my cupboards, fridge and freezer, I decided on tamales. Cheap and easy win. Instead of stove top steaming, I decided to use the steam setting on my Ninja Foodie XL 6.5 l multi-cooker to cook my tamales.
While I thought about the filling, I dumped 1 & 1/2 Cups of white Maseca, instant white corn masa, into a large mixing bowl. After sprinkling in some salt, black pepper and paprika I slowly poured in, while mixing with my spare hand, 1 Cup of warm water. By the time I'd completed the task I determined my filling.
I had five leftover lamb, beef & chorizo meatballs from an earlier Meatball Challenge Great Adventures. I also repurposed a staling, 5 day old, left over cheddar biscuit. I had no leaves or corn husks and decided I'd give wrapping tamales in parchment paper. Can you steam tamales, wrapped in parchment paper, filled with leftover meatballs?
I'm going to say yes. Because they were both a great adventure creating AND ridiculously delicious.
I was very surprised, a stale cheddar biscuit made a perfect grinder and brought a lot of flavor to the table. I couldn't waste these meatballs they were the best I've had. I thought long and hard about how to repurpose and reutilize them. I thought soup I thought wrapping them in bacon I thought just making a marinara sauce and tossing them in. Instead, I took a more adventurous path and decided to make a meatball tamale or five.
