Repurposed Leftover Lamb Tikka Masala

I had, just a little, leftover lamb Tikka Masala. In the Tupperware I had, maybe, 3/4 cup with 3 or four lamb chunks. Since I didn't feel like reheating and eating it again, I decided to completely change the flavor profile and texture by adding 3 very simple ingredients.


So to start off, Snap Peas...

I washed and trimmed the ends and tossed them into a pan. That should give my new, repurposed left over lamb tikka some bonus texture.

I sprayed down the snap peas with some I can't believe it's not butter spray and seasoned them, lightly, with a pinch of salt and pepper. With my stove on medium, I began sauteing them in the pan. ProTip, the word saute means to dance and in cooking it means you keep the stuff moving around the pan, bouncing, rolling and always moving.

After a few minutes of sauteing the snap peas I dumped in a leftover Tupperware containing my left over tikka masala. I continued to saute and mix the vegetables with keeping it moving, because stainless steel pans don't like things sitting on them for long.

Then, l grabbed one ingredient which would entirely change the flavor profile...

A can of no bean, Wolf brand chili!!!!

As it simmered away, I mixed it together being very certain to scrap the bottom of the pan constantly.

One last item for my completely altered lamb Tikka, a brick over leftover rice. I was glad to dispose of plain, white leftover take out rice.

A few more minutes of stirring and scraping the pan, I had a final product. It had a brand new flavor. The snap peas maintained some crunch and bonus green flavor in every bite.

This single pan stew medley could easily feed a hungry family of four, removed 2 leftovers from my fridge and had greens in every bite.

The moral of this post?

Even with a few morsels of meat, from a leftover meal can be quickly and cheaply transformed into a completely new dinner.


Also, do not underestimate the power of a single can of chili! Though the Tika masala flavor remained inside of the Lamb, the simple addition snap peas and a can of chili made every bite a flavor and texture explosion 💥


Ingredients:

3/4 cup of left over Tikka Masala with 4 cubes of lamb

3/4 cup leftover take out white rice

1 snack bag of snap peas

1 can of no bean chili


Total cost?

"Free" leftovers

$1.50 snap pea snack bag

$1.50 can of wolf brand no bean chili


Total cost for this entire meal was about $3
