Quick spongey bread

My sister sent me a covid snack filled care package. It included bagel chips, but I went straight for my mixing bowl and sack of bread flour.

WWithith haste, perhaps a bit too much, I poured in about this much flower. I quickly cut the top off a pack of quick rise yeast, put a tablespoon of sugar in a little packet and filled it with a little bit of warm tap water and made a yeast goo bubbling in the packet it came in. I put water in the bowl of flour from the tap as well and slowly began stirring in the yeast concoction. It definitely was a loose dough but it did come together as the glutens started to form. I drizzled the top with olive oil, wrapped it in pressing seal and took it into my laundry room to proof. Roughly, an hour later, I retrieved it and poured it onto a parchment lined pan. Straight in the oven for 20 minutes at 400° f. I let it cool, before cutting it, placing the toppings on it and back into the oven. Finished with a little diced up parsley. Before I knew it I had eaten half a loaf of bread and a ridiculously large amount of cheese and artichoke dip
