Saw a special on choice 3 lb roasts for five bucks. This one looks like a cross rib and it's boneless. With the bone, would have been a little bit more expensive, maybe seven or eight bucks. A bone in would have been some bonus flavor. But I am not disappointed one bit by the roast or the broth.
Give it a little salt and pepper.
Sear it on all four sides.
Don't worry about the brown bits, or burning or sticky things in the bottom! That's just going to make flavor, later.
Adding 4 cups of water and a couple splashes of Worcestershire.
You can throw in a more water and some potatoes, but I just wanted the beef.
Since I didn't have any carrots.
I went with onions.
In the back of my freezer I found a bag of frozen bell peppers and I threw that in.
That's it. Let's just say a dollar for the onion and maybe another $2 for the Frozen peppers. A very quick and easy meal, that could easily feed four people, perhaps with a side dish as well or potatoes just tossed in the pot. $10 maybe...
That's it! Easily completed under 5 minutes.

Pressure cooker on and you can let that thing go for as long as you want or as little as 45 minutes.
As I like the meat to melt in my mouth, I went for an hour and a half... And this is what happened...
Plus... Since I'm a single guy I have a whole bucket of ridiculously tender and flavorful roast smothered and onions and pepper remnants from the pressure cooking process. AND I have two bowls of some of the best broth on the face of the planet involving beef onions and peppers. They could turn into a soup, they could turn into a gravy, the leftover roast could be a sandwich with a roast beef gravy all sorts of fun things are in my future with this quick and simple $10 meal.
