This is a dish my mother would call Manast. Not sure what Manast means in Italian. This is a very fast and satisfying meal, regardless of the time of day. The only thing you will need is hotdogs eggs potatoes and onions. I do prefer a good all beef hotdog.
This recipe really is all about utilizing what you have. However, this is a goto recipe when I do not want to spend much in the kitchen over the stove. My daughter will make this recipe many times without the potatoes. Keep in mind you could always use other vegetables. Bell peppers work great in the recipes.
Ingredients:
1 pkg hot dogs cut in to 1/2-inch chunks
6 small red potatoes diced same
1 medium onion diced
5 large eggs mixed
Parsley dried 1/2 teaspoon or fresh 1 teaspoon minced
Pinch Red Pepper flake
Salt and pepper to taste
Yield:
2 – 3 hungry adults
Directions
Peel and dice the potatoes cutting them in roughly the same size as your hot dogs and fry them in a little bit of oil in a relatively nonstick pan if possible. I prefer to use a little oil and butter. Once the potatoes are nicely Brown remove them from the skillet and moved to paper towels to drain. Next sauté your onions once they've achieved a little color throw in your hot dogs red pepper flake and pepper. Mix up your eggs in the meantime and add parsley. When you see that the hotdogs have some color on them, add in your potatoes and eggs cook the eggs until you almost think they're done and remove them from heat the residual heat will continue to cook the eggs. You really do not want to overcook the eggs.
