Left over pulled pork pepper jack cheese sandwich with waffle fries crisped in the Ninja Foodie

I was hungry. I wanted something quick and easy. I have a couple pounds of leftover pulled pork from yesterday's pressure cooked bone in pork rib roast...

Unfortunately, I was too hungry to do something creative with the leftover rib roast components. Leaving a 15 minute meal basic, but ridiculously awesome and delicious.

Quick and easy. I dropped a good portion of Frozen waffle fries into the ninja foodie XL with the air fryer lid down set for 12 minutes. Then I proceeded to create myself a triple decker pulled pork and pepper jack cheese sandwich.

If you have read this far, or, for some reason do not know how to make a sandwich... Here's how I did it.

To start I put a pan on the stove over low heat. I dropped off a small pad of butter and swirled the pan around to let it melt and coat the bottom evenly. Into the melted butter I placed one piece of bread, a layer of the leftover pulled pork and a second piece of bread on top of the layer of pulled pork. it was at this moment I decided I also wanted to add mustard, so I squeezed out yellow mustard onto the top layer of bread. Also, I added a layer of pepper jack cheese and then another piece of bread on top of that. By the time I had the cheese down the bottom piece of bread was already starting to brown. Perfect timing I flipped it over, this time with the cheese side down. After about a minute I flipped it over again with the meat side down and placed another pan on top. I shut off the heat and let it rest while the air fryer still had 5 minutes going on it.

Since my sandwich was resting and heat was being distributed throughout it inside of its little dutch oven I focused my last 5 minutes on a dipping sauce for the waffle fries. Into a small ramekin I mixed two tablespoons of olive oil based mayonnaise, two tablespoons of a yellow jalapeno mustard, one tablespoon of honey, one tablespoon of green pepper tapatio, a good sprinkle of black pepper, paprika and finally a pinch of salt.

Let's see how how many ways I can repurpose this leftover pulled pork!!!
