Yesterday, I posted some meatballs to test the challenge group functionality. By the end of my great meatball adventure, I must admit they were the best meatballs I've ever had. I believe in part because of the spicy chorizo and the cheddar biscuit and a bit of milk as an egg substitute, truly added an extra level of depth that a bland or flavorless binder simply would not bring to the plate.
I made a little more meat mixture than I could put into a ball shape and drop into the baking pan I used. So that leftover meat concoction, I simply added additional spices to. For the meat mixture recipe please see yesterday's meatball blog post.
I was somewhat torn between making a garlicky meat gyro or an Indian style meat gyro. I ended up deciding a little bit of cumin, paprika, very small dash of cayenne and a sprinkle of granulated garlic would do the trick.
