Objective:
Hot chili flake beef jerky is an excellent snack when you are outdoors or need some protein quickly. Most of the time when I go out fishing, I will grab a bag of beef jerky at the store. However, that is awfully expensive when you consider how much it would cost to make it yourself. Recently I purchased a whole I of round and I broke it down. The Eye of round is cost effective and is an excellent piece of meat for beef jerky as it is quite lean and when you cut it right it will be nice and tender. Plus, Eye of round has a strong beef flavor.
I also have been researching utilizing beef jerky as an outdoor meal. Because many times when I go camping, I try not to bring a lot of meat as I am expecting to catch fish. So, having a lightweight simple beef jerky recipe such as “chipped beef on a shingle” or as I know it “shit on a shingle” would be great when I do not catch lunch or dinner.
Goal:
Reduce cost and improve taste.
Ingredients:
1 pound of Eye of Round or lean beef.
Marinade
1/4 Cup of Soy Sauce
1 tablespoon Dark Brown sugar or Light brown sugar
3/4 teaspoon Pepper
3/4 teaspoon Garlic
3/4 teaspoon Onion
1/4 teaspoon paprika
1 teaspoon kosher salt
1/4 teaspoon red chili flake add more if you wanted hotter beef jerky
1/2 teaspoon sesame oil (optional)
Recipe:
Step 1: Trim the Eye of round of any fat. Leave any fat that is running through the meat fibers.
Then place the meat in the freezer for 20 minutes to firm up to easily cut the meat.
Step 2: To make the marinade place all the ingredients except meat in a medium bowl and whisk till all the dry ingredients are incorporated into the soy sauce.
Step 3: Once the meat is firm cut the meat across the grain approximately 1/8 – 1/4 inch thick.
Step 4: Place the marinade and meat in a quart zip lock bag. Refrigerate for 8 to 24 hours for a stronger flavor.
Step 5: Dry the marinated meat on paper towels and place the meat on a rack and dehydrate the meat at 160 F. I used a dehydrator with adjustable temperature.
Started checking the beef jerky after 3 hours. You are looking for the beef jerky to crack. With experience you determine the beef jerky consistency you prefer.
Notice the space on bottom right of the picture. It's because it was so good we snagged a few pieces before I took the picture. LOL
The Ninja Foodi can also dehydrate the beef jerky. I have only one Foodi Ninja which is used quite often, so I have not been able to test this recipe.
