Great Meatball Adventure Challenge - hamburger - lamb - chorizo - cheese - eggless

Recipe:

1 lb - Ground lamb

1 lb - Ground beef 85% lean / 15% fat

1 - Tube of spicy mexicana chroizo

4 - Frozen pre-cooked breakfast sausage patties

1 - Stale Cheddar biscuit from a prior post (Chicken and cheddar biscuits - cheap 9pm snack)

Some - Shredded cheese **Though in hindsight I should have used cubes of cheese**

1 - splash of milk **guesstimated 4 Table spoons**

Seasonings: Coarse sea salt, black pepper, herbes de provence and paprika



Earlier today, I spoke with my co-author and told him I was making meatballs for dinner. I told him what I was putting into it, which is located directly above this diatribe. He said, "You'll need an egg in there". I replied, I'm going to attempt making eggless meatballs. Instead of an egg I'll utilize one of the leftover cheddar biscuits and milk. I made them the other day, as a late night snack with some air fried crispy chicken, in the Ninja. They're starting to go stale. So that's what I did...

I began by crumbling one of the leftover biscuits into a small bowl.

Splashed in some whole milk, roughly 4 Table spoons.

Mixed it up a bit and set it aside. It needed a bit of time to mush and rehydrate the glutens.

I grabbed one of my larger mixing bowls and incorporated the meats, seasonings and with an added dash of love. Food without love is a requirement. Food with love makes a culinary adventure worth embarking on.

If you can't guess what comes next...You may be either new to culinary adventures or...well...


I began balling the meats. If I cared, I would have used an ice cream scoop or scale to weigh each ball, but I didn't because I didn't. *shrug* I picked up a gob of meat, smashing it into my palm somewhat flat like a disc. Next I sprinkled maybe a Tablespoon of shredded cheese into the center of the patty. Then, smooshed it into a ball shape, with the cheese in the center. Setting the meaty balls on a bed of extra virgin olive oil, with space between each. Finally, into a 400 degree F oven they went. I set the timer for 25 minutes and went back to linkedin job hunting.


About 20 minutes had passed and I started hearing hissing, crackling and popping coming from the oven. So, I got up and checked my meatballs. They looked great, the entire house smelled great and it appeared my adventure was not only great, but a success.


I pulled the meatballs out at 20 minutes and let them rest on the stove burners in their juices.

Meanwhile, I sliced up a few small potatoes, splashed them around in the meat grease and dropped them in my Ninja Foodie XL with the air fryer lid on 400 degrees F for 10 minutes.


The first meatball I cut into steamed, the potatoes were crisp on the outside and tender, yet firm, within. The balls were juicy, yet meaty, smooth and yet firm. BOOM! MiC Drop! The best meatballs I've eaten, thus ending my great culinary adventure challenge. If they top my list of amazing meatballs, they're proper.
