Foodi Deluxe XL Italian Pressure Roasted chicken

This is NOT your typical roasted chicken. The Foodi deluxe XL can impart strong flavor deep into the chicken. Your typical oven roasted chicken has firm texture and that wonderful crispy skin is always desired. Where this method of pressure cooking and then air crisping the chicken produces a chicken that is uniquely good to eat and is GREAT for leftovers.

When we consider pressure roasted chicken the leftover meat is best suited for certain recipes. That is because this produces a softer and moist texture. Caution must be used when adding this type of chicken into anything that will be stirred as the meat will quickly break up. So, this meat is best when added late to any recipe that you are creating from this leftover meat. Save the bones for a unique flavorful stock.





Here are a few of my favorite leftover recipes suggestions.

· Chicken and Egg salad

· Chicken Alfredo

· Chicken stock

· Chicken soup


I found that the chicken was crispy only on the top quarter of the chicken. The Foodie Deluxe LX can produce excellent crispy chicken. However in the limited space you would have to turn the chicken inside the basket which is not that easy. For excellent crispy skin cut the pressure cook chicken in to pieces to air fry/crisp.

Goals: Ensure the leftovers are flavorful and moist, reduce cost and waste.

Note: Spices go a long way in flavoring any pressure-cooked meat.


Ingredients:

6 -7 pound Whole Chicken

Rub /Seasoning

4 cloves of garlic diced

1 large Bay leaf

1/3 teaspoon Rosemary

1/2 teaspoon oregano dried

1/2 teaspoon onion powder

1/2 teaspoon red chili flake

1/2 teaspoon black pepper

1/2 teaspoon ground sage

1/4 teaspoon crushed fennel

1/2 teaspoon salt

Juice of a half lemon

1 Tablespoon oil

1 Cup broth/stock or water


Salt is something that must be used with caution any time you want to use the cooking liquid. Often I will cook rice in the cooking liquid used to pressure cook.







Combine all rub seasonings including oil (except bay leaf) to make a paste. Rub the paste under the skin and on the skin.

Flavor booster option: Set the Foodi function to sear with temperature set to low/med. Place spices in the pot with the oil and very gently heat the spice. Remove oil and spices when garlic is aromatic and barely showing signs of browning. Allow to oil and spices to fully cool before spreading it on the chicken as described above.



Place liquid in the Foodi pot and insert crisper basket. With the spice applied to the chicken, place the chicken in the crisper basket. Set the Foodi function to pressure and the temperature set to high for 40 minutes and release the pressure using the quick method.


Caution the Foodi alarm is not load and easy to miss. Allowing the chicken to sit on warm will continue cooking the chicken.


The chicken is cooked and can be refrigerated and crisp up later or shred the chicken.


For the crispiest possible chicken I would suggest cutting the chicken in half after pressure cooking and air frying half a chicken at a time in the crisping basket.


To crisp a whole or half chicken use the crisper basket. Set the Ninja Foodi Deluxe function to air crisp for 15 minutes.
