These little prepackaged pork loins are usually under $5 when they go on sale. Almost every other shopping trip they seem to be buy one get one free or steeply discounted. I really love to stock them up, in the freezer, because how quickly a main course can be made with all sorts of different sides without any effort.
This one, I simply cut the package and dropped the marinated and seasoned pork loin onto the ninja foodie xl's lower rack, while still frozen solid. I poured in a cup and a half of water, just enough to ensure the pressure cooker setting would function.
When the timer went off I put the pressure cooker lid on and set it for 20 minutes.
The broth, now consisting of water and seasoned pork loin drippings, married together by the magic of pressure cooking was to die for.
I decided to drop the air fryer lid, for a quick 5 minutes, to give it a little bit of exterior texture. The pressure cooking process makes it look somewhat soggy.
Next, while the pork loin rested, I poured a single serving of couscous into a small ramekin. I then ladled equal parts of the broth into the couscous, gave it a quick stir, covered it and set it aside.
While the couscous steeped, I carved the now crispy, tender pork loin and prepared my plate.
With absolutely little to no effort I had a meal, wonderfully seasoned leftover stock and a full belly for roughly $5...
I could have easily thrown potatoes into the broth, or shaved off 10 minutes of the pressure cooking time and dumped in some frozen vegetables or fresh vegetables. I love the ninja foodie XL because it's very versatile and one single pot clean up.
I did drizzle a little bit of salsa verde on the pork loin which truly made it zing on top of the exterior crispy coating of seasonings.
The couscous was perfection being rehydrated with the pork loin stock and its seasoning marrying both flavor profiles of the side and the main.
