I went to the store today, as always, I took my time in the meat section and found this amazing deal. Buy one get one free bone-in pork rib roasts. there was maybe half a dozen to choose from and I picked the ones with the best looking marbling. A little over 8 lb for $15.22... There's an old saying that meat on sale is about to go bad, or is already spoiled. At $2 a pound I'll take it! 🤣

Though I was not planning on making 8 lb of pork, I figured what's another great adventure!
Within minutes of getting home, I had all the groceries wiped down, for sanitary purposes in this covid time, and both pork loins placed into the ninja foodie XL 6.5 L multi cooker.

Without really thinking about it, I went to the freezer and grabbed a 1lb (16oz) bag of three color pepper and onion strips. I dumped the bag into the gaps between the two rib roasts.
Next, I walked over to my pantry and grabbed six packets of Goya Sazón seasoning. Each packet is a quarter teaspoon or 1 gram by weight. If you make your own sazón seasoning, or don't know what "sazón" seasoning is, it is a very basic mix of salt, dehydrated garlic, cumin, coriander and a bit of annatto for a reddish coloring. I usually add a little paprika when I make my own and some include Mexican oregano.

For the liquid I went to the fridge and poured in a cup and a half of orange and pineapple juice mix.

A little bit of bonus black pepper and it was time to put the pressure cooker lid down on the ninja foodie.

I set the ninja foodie XL on pressure cook and the timer for an hour and a half. I'm not sure where this great adventure will lead. I've never done this before, have absolutely no idea what I'm doing and didn't watch any youtube videos or google anything.
So here is what I know... I am pressure cooking two 4 lb bone-in pork rib roasts with a pound of chopped onions and bell peppers, along with a cup and a half of orange pineapple juice and some Sazón seasoning...
I will update this post later today with the results and what I'm going to do with the leftovers.
One thing I do know, at this moment, only 10 minutes from walking in the door... It smells amazing in here! I spent roughly 2 minutes of preparation and 8 minutes creating this post to this point. Extra cheap, super easy preparation and from what I can smell this is going to be ridiculously delicious. Time will tell, however, will an hour and a half be enough to pressure cook 8 lb of bone in pork rib roasts? Will one and a half cups of juice be sufficient for the pressure cooking process? What will I do with all of the leftovers? Stay tuned!!!
Was 1 & 1/2 hours enough? Perhaps, but I gave it another hour. Watch the video...
