15 Minute Pepper & Onion Egg Bites in the Ninja Foodie XL Pressure Cooker

Ingredients:

Half a dozen green onions 4 mini sweet peppers

3 small tomatoes

3 slices of sharp cheddar cheese

1 slice of bread

4 eggs

Seasoning to taste (I used black pepper, salt and a half tablespoon of oregano)

First, I cut and removed the seeds from the pepper, then, one by one added the ingredients into my Braun hand mixer, pulsing each into a chunky puree. I like to do the eggs last to ensure all the flavor goodness is mixed up. Before adding the eggs I put a layer of seasonings, so they mix with the egg & veggies.

With my mixture well blended, it's time to break up and insert a slice of bread into each cup. I choose to use the heel, because, *shrug* why not?

I give each cup a quick couple sprays of I can't believe it's not butter spray, as I find the olive oil spray imparts a bit too much flavor. The butter flavor, also, adds a much better breakfast profile.

Next, I pour the mixture into a small silicone egg pan. Overflow isn't an issue, as I can take any flat object and scrape it into one of the holes.

Finally, into the Ninja Foodie XL goes the upper rack, being used as the base. One cup of hot tap water, so the pressure cooking process starts faster. Of course, the silicone egg mold goes in last. I went for 10 minutes on the pressure cooking setting and latched the lid closed.

PROTIP: If you don't want to steam clean the underside of your cabinetry or wall, a couple paper towels over the exhaust and you're good to go. PLUS, those steamy hot paper towels are great to wipe down the stove with! They take up grease and dried on chunks immediately! Then I usually follow up with a regular kitchen cleaner spray...still...nothing like a hot steaming towel to wipe up with!


AND DONE!!! The mixture tends to puff up, like a soufflé, but I've never had one escape.

It's important, after letting off the pressure, to remove the lid and let them sit for a few minutes and they'll settle down. Then pick the silicone tray and flip it onto a plate and ENJOY, or share...

The final product can be eated with a fork, no knife needed.


They can be dropped into a ziplock bag and taken on the road for a great, easy to eat while driving breakfast.


They could be easily squished between two slices of toast and make an amazing breakfast sandwich.

These egg bites are much better, cheaper and easier to acquire than those from any drive thru coffee spot's.


I've enjoy them many times, as they take little prep, almost no work and are done in about 15 minutes total.
